Oxheart Cabbage, Curry & Wheat Grains

Did you knew that wheat berries are completely sustainable, healthy & unrefined? Delicious in salads, stews or dishes like this one!

Anyway, the key for thís dish is to use the best curry powder available. Personally, my favorite is the curry powder (Masala) of Arva Spices, a company located in Paramaribo (Surinam). Happily we have these so-called “Toko’s” in the Netherlands, where you can buy this curry powder. Even when you are not located in the Netherlands, I am sure you do have a great supplier near you as well. Luckily all spices are available everywhere these days!

Curried Oxheart Cabbage, Shiitake & Wheat Grains

Equipment

  • Baking pan

Ingredients

  • 1 Onion
  • 1 clove Garlic
  • 6 tbsp Olive Oil
  • 1 tbsp Curry Powder Masala (Arva Spices)
  • ½ Oxheart Cabbage
  • 150 gram Wheat Berries
  • 400 ml Vegetable Stock
  • 6 Dried Apricots
  • Some Walnuts
  • 100 gram Shiitake

Instructions

Preparation

  • Slice the cabbage into strips, the onion in small cubes and the garlic in slices.

Cooking

  • Add the olive oil to your hot baking pan, and add the onion and garlic.
  • When the onion and garlic are baked, you can add the curry powder and cabbage. Bake this until the cabbage has turned glassy.
  • Next up, add the wheat berries and the vegetable stock and let it boil for 45 minutes.
  • In the meanwhile, chop the walnuts in small pieces and the shiitakes and apricots in slices. Bake the shiitakes in a baking pan until brown and baked.
  • When the wheat berries are almost cooked through, you can add the apricots, walnuts and shiitakes. Cook the mixture for at least another 5 minutes.
