Vegan Dutch New Years Rolls with Coconut Cream & Pistachios

These cookies are a traditional food item during New Years Eve. Especially in the North and East of the Netherlands! The flat cookies are called ‘ Kniepertjes’ , and the rolled cookies are called ‘ New Years Eve Rolls’ . The Kniepertjes, the flat version, represents last year. The year has unfolded and shown itself, like an open book. The rolled cookies stand for the upcoming year. The upcoming year is still unknown, and therefore can be seen as a closed book.

Traditionally you get at least two ‘Kniepertjes’ en two ‘New Years Eve Rolls’. When served, the rolled version are filled with cream. For this vegan version I’ve used coconut cream, but you can use regular cream as well.

Vegan ‘Kniepertjes’ & New Year Rolls

Equipment

  • Oublie Waffle Maker
  • Electric Mixer
  • Bowl

Ingredients

Dough Ingredients

  • 250 gram Flour
  • 140 gram Butter
  • 3 tbsp Milk like oat milk
  • 150 gram Sugar like Brown Sugar
  • Cinnamon
  • Salt

Filling

  • 400 ml Coconut Cream
  • 100 gram Powdered Sugar
  • ½ Lemon
  • Pistachios

Instructions

Preparations

  • Preheat the waffle maker. Add some olive oil or butter to the baking surface to make sure the waffles won't stick to the iron.

Making the Dough

  • Mix all dough ingredients until everything is mixed well. For these waffles I used brown sugar, this explains the color. However you can use any sugar you like!
  • Divide the dough in equal sized balls. You should be able to make around 20 pieces. If you want to make smaller or bigger cookies you can adjust the size of the dough balls!
  • Bake the waffle by adding the dough ball to the waffle maker. Press shortly to make sure the dough is flattened out. Bake the cookie 1 or 2 minutes, whereafter you need to roll it directly around the end of a wooden spoon. Let the cookie cool down and remove the spoon.

Filling!

  • Use an electric mixer to whip up the coconut cream and powdered sugar.
  • Once set, you can add some finely grated lemon zest to the cream. This will give the cream a surprising and refreshing flavor!

When serving..

  • Make sure to add the cream once your guests would like to eat one. Leaving the cream in the waffles too long will make the waffles sloppy. When filled, finish with some chopped pistachios.
